Kheer is one Indian sweet/dessert prepared in every Indian household. It is relished equally by adults as well as kids. One thing great about kheer is you can have it hot as well as chilled. And the magic is it tastes different in both the states. Thats why some people like it hot and some cold.
Its easy preparation and irresistible taste makes it a must to make on list on almost all festivals and get-togethers.
One such healthy kheer is carrot kheer.
This recipe requires use of fresh and healthy carrots, which are rich in B carotene, dietary fibers and antioxidants which makes this dish a very nutritious dish.
Lets learn how to make/prepare Carrot Kheer by following this easy recipe.
🍧Carrots- 2
🍧Milk- 1 ltr
🍧Ghee- 1tbsp
🍧Sugar- 2 tbsp( or as per your taste)
🍧Green cardamom/Elaichi powder- 1 pinch
🍧Saffron- few strands dissolved in 1 tbsp warm milk
🍧Cashew nuts, almonds and pista -1 tbsp chopped
🍧Peel and grate carrots.
🍧Heat ghee in a non-stick or heavy bottomed pan, add grated carrot and sauté over low flame for 4-5 minutes while stirring continuously.
🍧Add milk, mix well and bring it to boil over medium flame.
🍧Cook on low flame for approx 15-20 minutes, stirring in between frequently.
🍧Add sugar.
🍧 Cook until it starts to thicken or for around 5-10 minutes, stir continuously to avoid burning of carrot and milk.
🍧Add elaichi powder, saffron, nuts and mix well.
🍧Turn off flame. Allow it to cool at room temperature.
🍧 Serve carrot kheer warm or chilled according to your choice
