NUTS PANJIRI

 Today I’m going to share with you all a very simple, nutritious n soulful dish.

Simple because its the yummiest dessert(one of my fav) which is ready in just 10-15 mins.

Soulful because generally this dish is eaten in our family either to break the fasts or during the fasts when we cant have usual regular food.

There are many ways of making Panjiri- with flour, with herbal gums etc.

However I prefer making it without flour and less ghee.

In our family we generally break our fast by having this Nuts Panjiri with a glass of milk/tea.

INGREDIENTS:

Ghee- 2 tbsp

Almonds- 1 cup (sliced into halves)

Cashew nuts- 1 cup (sliced into halves)

Walnuts- 1 cup (sliced into halves)

Pine nuts- ½ cup

Melon seeds- ½ cup

Pistachios- 1/4th cup (sliced)

Desiccated coconut- 1.5 cup

Powdered Sugar- 1.5 cup

Green cardamom- 6-7 (seeds only, coarsely crushed)

DIRECTIONS:

 In a heavy bottomed pan put ghee.

Add almonds n sauté for 2-3 mins.

Next add cashews n sauté again for 2-3 mins.

Now add pine nuts,walnuts n melon seeds.

Mix well n keep roasting for 2-3 mins.

With the help of a slotted spoon/spatula take out all the nuts from the pan.

In the same pan add desiccated coconut n roast in the remaining ghee. Roast for 3-4 mins on medium low flame. Add crushed cardamom seeds.

After that switch off the gas n add roasted nuts and pistas to the roasted coconut.

Let the mix come to room temperature.

Then add powdered sugar n mix well.

Ahaaa!!!! Its ready to devour.

You can keep this Panjiri in an Air-tight container for 2-3 weeks.

This is an ideal dish which can be eaten during upcoming Navratri Fasts.
