Some things take you to your childhood n you just relive your childhood once again.
You must be wondering what is the connection between childhood n carrot barfi!!!!
When I was small my Bua(Aunt) used to bring Carrot barfi whenever she used to visit us. I was so fond of that barfi that my sweet Aunt used to send them for me very often.
For me, the word carrot barfi has become a synonym for aunt. Luv you my sweet aunt. May God bless you with good health.
Thought of recreating that nostalgic dish in my kitchen. N I think I deserve a pat on my back. The taste was heavenly and just the way I love.
My hubby n son couldn’t believe I made it at home. 
 
INGREDIENTS:
Carrots 1kg
Full cream Milk 1ltr
Sugar 400 gms
Cardamom 8-10 ( Remove the husk n coarsely ground the seeds)
Chopped Cashews 8-10
Almond Slivers 2tbsp
Pista Slivered 2tbsp
Desiccated coconut 1 cup
Ghee 3tbsp
DIRECTIONS:
Peel,trim the edges of the carrots.
Grate the carrots with the help of a grater(fine side). 
In a heavy bottomed pan keep milk for boiling.
When it comes to boil add grated carrots to it.
Mix well. Keep the flame on low. 
Keep stirring in between. Scrape off the sides of the pan to remove the dried up milk.
It’ll take about one hour for the milk to be completely dried up. N carrots will become soft. 
Now add Ghee n roast well for 4-5 mins. 

 Next add sugar. Sugar will release its moisture n you’ll see again the  consistency will become thin. Don’t worry this is the moisture released by sugar.
Keep stirring now otherwise sugar may get stuck to the bottom of the pan n get burnt.
Keep stirring until all the moisture dries. It’ll take about 40-45 mins for all the water to get dried up.
 
 
             
Now add grounded cardamom seeds, coconut powder n chopped cashews.
Mix well. Roast it for another 5-10 mins.
Turn off the flame. 
Take any deep plate or tray. Grease it with some ghee. 
Put the Barfi batter in the greased tray. Spread it evenly. Press it with the back of a ladle for spreading.
Garnish with Almond n Pista slices.
Keep it aside to set for approximately one hour. 
When it is completely cooled down n set cut into your desired shapes.
You can keep this Carrot Barfi in fridge for up to 1 week.
