What does your heart long for to beat the heat? I am sure you must be looking for something chilled, something icy cold!!
 
 
 
 

Summers may be the season of sweltering heat and draining humidity, but summer is also the season of delicious Mangoes! And when you have juicy mangoes and a refreshing custard ice cream, simply combining the two is the best way to cool your body in these temperatures. There was some basic Custard Ice Cream lying in my freezer, just added mangoes to it to give it a delicious twist. And moreover who can say NO to Mangoes ;)
Homemade food is always the best and this heavenly mango ice cream is something you simply can’t buy at the shops. And I think in this recipe we nailed it!!
 
 
 
The texture is pure creamy, silky bliss and the taste is so fresh and so fabulous, sheer mango perfection. This has the real flavor of mango, not a single bit of artificial flavoring or colors has been used. It’s really incredible. This is a dream come true for any mango lover!!
 
Ahhhhh!! Look at that cheerful, happy, sunshiny and sooo divine color!!

To have a rich flavorful ice cream, use the best quality ripe mangoes that are deep in color. This way you will get bright in color, silky & smooth in texture and flavorful mango ice cream. I have used the delicious Alphonso mangoes , you can use any sweet mangoes with deep color pulp.
 
 
 

This Ice Cream Recipe is my absolutely favorite.

Why? Because-
*Minimum Ingredients required to make it.
*NO CHURN
*CREAMY, SMOOTH, LIGHT & FRESH
*EGGLESS
*You don’t need any Ice Cream maker or any fancy equipments to make it.
*It’s Melt in Mouth.
*No Ice Crystals.
*Super duper Simple, Easy and Quick to make.
*You just need Custard, Whipped Cream, Condensed Milk to make the basic Ice Cream.
*Add in some fruit purée of your choice to bring in the healthy element. Although this is an option but believe me you must try it out.

Let’s see how to make it by having a look at the Ingredients list first.


INGREDIENTS:

*FOR CUSTARD
(You can use store bought readymade custard also)

Milk- 250 ml
Custard Powder- 2 tablespoon
Sugar- 2 tablespoon
*FOR WHIPPED CREAM 

Whipping cream/ Heavy cream- 400ml
Icing sugar- 1 tablespoon

*Condensed milk- 200grams

*Pulp of 3 Mangoes
*Mango- 1, diced in small cubes

DIRECTIONS:

Start by heating milk in a pan, reserving 1/4th cup of milk aside.
Add sugar and stir until it dissolves.
Mix the custard powder in the 1/4th cup of milk into a smooth paste without any lumps.
Next, add this custard mixture to the boiled milk and keep the flame low.
Stir it continuously for 2-3 minutes.
The mixture will give a thick custard.
Set this aside to cool completely. Cover it with cling film such that the film touches the upper layer of custard. This will help in preventing the formation of skin on the custard.
Keep it in the fridge to be chilled.
 
 

Meanwhile, pour the chilled cream in a chilled bowl.
Begin to whip by either using the whip attachment of stand mixer or by hand mixer, until stiff peaks. Add icing sugar and mix well.
 
 
 
Add in condensed milk and give it a quick whip.

Whisk the cooled custard well to ensure it is lump free.
Next add in the whipped custard to the whipped cream.
Mix gently and evenly with the help of a spatula.

Your basic Custard Ice Cream is ready.
 
 

Make a puree of 3 Mangoes by peeling and blending the flesh.
Add in the Mango puree and diced mangoes in the basic ice cream.
Mix well.
 
 
 
Put the prepared Ice Cream mix in a freezer safe and air tight box.
Cover the bowl and freeze until set. It usually takes 7-8 hours or preferably overnight for the Ice Cream to completely set.

Serve the yummy ice cream with toppings of your choice or as it is.
Enjoy the cool cool treat!!!!

Chilling Time: 7-8 hours
Makes: 1.5 liters (approximately)
