Nuts & Dates Milk

(No added Sugar)

A glass of milk keeps you healthy and wise. And if it’s loaded with the goodness of nuts and dates, it’s heavenly and delicious!!

This nuts and dates milk is a delicious and sumptuous treat to sip on. Loaded with calcium and proteins, it’s healthy and tasty at the same time. It has no added sugar in it. The dates give this milk the perfect amount of sweetness.

This milk is packed full of the nutritious goodness of almonds, cashews and added flavorings, for which I have added cardamom powder and fennel powder. Saffron can be added to it to enhance the flavor. However, I have skipped it.

The best thing about this milk is that it can be served both ways, chilled or hot. On cold winter days you can have it hot as it keeps the body warm, whereas during hot summer days you can chill it to give you relief from the summer heat.

It can also be your perfect breakfast partner for a healthy lifestyle!!! In today’s world when life is super busy, some of us tend to either skip breakfast or just grab unhealthy packaged stuff on the go. Well, this nutritious milk will not solve all your brekkie issues but I can bet one glass of this milk will keep you full for a couple of hours. I generally keep a pitcher full of milk in my fridge for every morning, prepared the previous night.

If you or your kids don’t like chopped nuts, just give it a blend in the blender and your superb nutty milkshake is ready. You can add any fruits like bananas, berries, etc. too to make it more nutritious and healthy.

Let’s see how to make this sumptuous treat by having a look at its ingredients-

INGREDIENTS:

Milk- 1 liter
Dates- 15-16, deseeded and chopped
Cashews- 8-10, chopped
Almonds- 8-10, chopped
Green cardamoms- 5
Fennel powder- ½ teaspoon

For Garnishing-
Pista slices- 1 teaspoon
Dried rose petals- 1 teaspoon

DIRECTIONS:

Soak the dates in water for 10-15 minutes.
After that deseed them and chop them.

In a pan put milk and switch on the heat.
Let the milk come to a rolling boil.

Meanwhile, chop almonds and cashews.
Take out the seeds of the cardamoms and ground them.

Once the milk comes to a roll reduce the heat to the lowest.
Add in chopped cashews, almonds, dates, fennel powder and grounded cardamom seeds.
Mix everything well.

Let this milk cook on low heat for about 14-15 minutes.
Keep stirring occasionally.

After 15 minutes you will see the milk will reduce a little bit and all the nuts and dates will be softened.

You can have this milk hot, warm or chilled.
Do serve this with a spoon so that the nuts which settles down can be swirled into the milk and can be eaten along with the milk.

You can garnish with Pista slivers and dried rose petals.

Enjoy!!
