Chia Seed Pudding with Mango & Passion Fruit

On a happy and cheerful note, I started my day on a healthy, blissful, colorful and happy note with all my favorites in one shot. 
A healthy bowl of Chia Seeds soaked overnight in Almond Milk topped with my favorite nuts and fruits, and of course my Sudoku!!

When you start your day with this deliciousness you kind of know that you will have an awesome day!!
 
 
 
I have shared my way of making this bowl. Sweetness of Almond Milk and Mangoes is perfectly balanced by the tartness of Passion Fruit.
However, you can use Coconut milk or any other milk of your choice. You can use fruits of your choice. Berries work equally well with this pudding. Same goes with toppings too. You can top it up with whatever nuts you like. Sometimes I add almonds and cashews too. I have added Stevia as sweetener, you can add Honey or Agave syrup or brown sugar, whatever is your preference.
There’s no fixed way to do it right. Just tweak the recipe the way you like.
 
 
 
 
Before jumping to the super simple and easy recipe let’s first see how beneficial these chia seeds are.
 
Despite their small size, chia seeds are full of important nutrients.

3-Chia seeds are relatively easy to find in any major grocery store. They are black in color and they have a mild, nutty flavor.

4-Raw, they can be sprinkled on cereal, yogurt, oatmeal, or smoothies. They can also be eaten cooked, added to baked goods like bread and muffins. Mixed with water, they can replace eggs in vegan cooking.


Now that we are fully equipped with the knowledge of chia seeds, let’s jump to the recipe part.


INGREDIENTS:
 
Almond Milk- 3 cups
Chia seeds- 5 tablespoons
Sweetener- 3 sachets of Stevia(adjust accordingly to your taste)
Mango- 1
Passion Fruit- 3
Blackberries- 7-8
Pecan nuts- according to need
Pistachios (slivered)- according to need
Sunflower Seeds- according to need
Pomegranate Arils- 2 tablespoons

DIRECTIONS:
 
We will start by soaking the Chia seeds in the milk.
In a bowl put milk, sweetener and chia seeds. Mix them well.
 
 
Keep the bowl in the fridge for minimum 5-6 hours or overnight.
Peel deseed and take out the flesh of mango. Blend the pulp to a paste.
Scoop out Passion Fruit’s pulp.
Next morning, take the chia seeds bowl out of the fridge. By this time they will swell up and have absorbed all the moisture of the milk.
Spoon out the prepared chia seeds in individual serving bowls or glasses.
Top it up with Mango and Passion Fruit pulp.
Garnish with nuts, blueberries and pomegranate arils.
Enjoy the cool treat!!!
