Ice Cream Cake with Mango Compote

If all your answers are positive then this post is definitely for you. A no sweat, no slogging-in-the-kitchen-heat, no fighting-with-ingredients, no fuss cake!!
 
 
 
 
 
Cake baking can’t be easier than this, and the best part is, there is no compromising on the taste! No one can tell the difference between this cake and a cake made using a conventional recipe.
You just need Ice cream, flour and Baking powder to make this beauty. I mean, how much easier can that get?
 
 
 
Just thaw the ice cream completely until it’s soft and whippable. Sift the dry ingredients and fold them in the whipped ice cream. Pour the batter in a greased mould and bake in a preheated oven. And that's it! Super easy and super quick, isn’t it?
Optionally, you can add some sugar powder, as I did, because when I taste tested the batter it seemed a little less sweet compared to my preferences.
 
 
You can serve this cake with either Chocolate sauce or Caramel sauce. When it’s served with a super delicious Mango Compote, however, it’s like heaven on a plate.

A compote is such an easy way to turn fruit into something sensational and scrumptious.
And this mango compote is so quick and easy to make and it’s oh so delicious!!
This mango compote is a fantastic accompaniment to ice cream, crêpes, waffles, pancakes, cakes, granola and or it goes very well even with your breakfast toast.
 
 
 
 
 
Let’s start making this delicious cake with compote.


For CAKE

Preparation Time: 5 minutes
Baking Time: 40 minutes

INGREDIENTS:

Ice cream- 2 cups
Flour- 1.5 cups
Baking powder- 2 teaspoon
Salt- 1/4th teaspoon
Sugar powder- 1/2 cup (Optional)


DIRECTIONS:

Completely thaw the ice cream. It should be completely melted.
Do not thaw it by microwaving it. It will lose the airiness. Leave it on the kitchen counter for an hour or so to completely melt down.
Preheat your oven at 180 degree C.
Sift baking powder, salt and flour together.
Combine melted ice cream and the sifted flour mix.
Mix until well combined. For mixing either use a hand whisk or you can use hand mixer or stand mixer.
Line a 7” round baking mould or a loaf pan with parchment paper and grease with a nonstick spray or oil.
Pour the batter in the greased mould. Spread it evenly and tap slightly on the counter to release the air bubbles.
 
 
Put the mould in the preheated oven at 180 degrees C for 30-35 minutes.
After that, check whether it’s done or not by inserting a skewer at the center of the cake. If it comes out clean your cake is done.
Let the cake cool down completely before cutting or serving.
 

 
 
 
FOR MANGO COMPOTE

Preparation Time: 5 minutes
Cooking Time: 15-20 minutes

INGREDIENTS:

Mangoes- 2
Sugar- 1/4th cup
Lemon juice- 2 tablespoons

DIRECTIONS:

In a small saucepan add in the chopped mango cubes, sugar and lemon juice.
Cook over a medium heat for 15-20 minutes, allowing the sugar to melt down completely, stirring often.
That’s it. It’s done.
 
 
Enjoy the delicious Mango Compote with waffles, pancakes, ice cream, yogurt, granola etc.
