Ahaa!!!! My favourite time of the year. WINTERS.... And Winters bring Holiday season with it. The happy times, the cheerful times.
In these cold winter months, what do you want? A cosy quilt, a hot cup of coffee accompanied with something yumm to munch on is always appreciated by everyone. Holiday baking mood is on and what can be better than some nutty and fruity Cookies to go along with your steaming cup of coffee.
 
 

These cookies may be considered a child's delight, but never have I seen an adult say no to them ;).
These are easy to make, healthy and scrumptious to taste. The melt-in-your-mouth texture of these soft cookies is fabulous, and once you start eating them, its hard to put them down!
 
 

They are loaded with my favorite nuts, tutti fruity, lemon flavoring and Cranberries which give these sweet nutty cookies a sour taste,which just balances all the flavors very well.
Just one dough has been shaped into different shapes, Christmas tree, socks, gingerbread man, star etc. But my favorite to make was the biggest one, the Cookie Wreath. I thoroughly enjoyed the whole process from the dough making to drizzling them with Chocolate and decorating with sugar sprinkles.
The icing on the cake oh sorry the icing on the cookies ;) is just melted chocolate sprinkled with some colorful sugar sprinkles to give those happy cheerful vibes.
 
 

The HIGHLIGHT FEATURES of these cookies are:
Whole wheat flour
No artificial flavors or colors
Nuts- which are a source of good fat and minerals.
And last but not the least
KIDS WILL LOVE THEM. TRUST ME.

Let's get started to make this super yummmy yet super easy to amke cookies by having a look at the ingredients first.


INGREDIENTS:

Whole wheat Flour- 3cups
All Purpose Flour- 3cups
Butter- 300 grams(chilled,unsalted and cut into cubes)
Baking powder- 1.5 teaspoon
Milk- 1/2 cup
Yogurt- 1/2 cup
Sugar powder- 6 cups

Lemon essence - 2 tablespoon
Lemon rind- 2 teaspoon
Lemon Juice- 2 tablespoon

Almonds- 1/2 cup, chopped
Cashews- 1/2 cup, chopped
Macadamia nuts- 1/2 cup, chopped
Pecan nuts- 1/2 cup, chopped
Cranberries, dried- 1/2 cup
Tutti fruity- 1/2 cup
To Garnish- Chocolate, Sugar sprinkles, Sugar balls, M&Ms (according to your requirement)



DIRECTIONS:

In a mixing bowl, with the help of a spoon or spatula mix together whole wheat flour, all purpose flour and baking powder.


Add chilled butter. Cut the butter into cubes and then add.

With your fingertips break the butter and mix with the flour. You can do it with food processor or a stand mixer or else get your hands do the job and feel the texture of the dough.

Mix till you get a bread crumb like texture in the mixture.

Add powdered sugar.Mix well with a spoon or spatula.

Add Yogurt.

Lightly mix and then add milk.

Add in rest of the ingredients.

Mix entire mixture together to a dough.
Don’t knead.

Keep this dough in fridge for half an hour.Chill the dough.
After half an hour remove the cookie dough and spread some flour on the work surface as well as on the dough.

With a rolling pin, roll the dough gently. Roll the dough to a thickness of 0.50 to 0.75 cms.

With the help of cookie cutters, cut the dough into cookies.
Gather the remaining dough and again roll. Cut with the cookie cutter and repeat the process.

Then place the cookies in a baking tray lined with parchment paper and keep this tray in fridge for half an hour. This step will make your cookies more crispier and will avoid the spreading of cookies while baking.
In the meanwhile preheat your oven at 180*C for 15 minutes.

After half an hour take out the baking tray from fridge and bake your cookies in a preheated oven at 180*C for 10-12 minutes.Keep an eye after 9-10 minutes.If you see the edges are getting brown remove the tray from the oven. Otherwise bake more.
Once baked, immediately remove them when still hot and place them on a wired tray or rack. Let the cookies cool down.

Once they cool down at room temperature you can decorate them with some melted chocolate, sugar balls and sprinkles.
Let your chocolate decorated cookies air dry for 1 hour.
After that place them in an air tight jar or box.
Enjoy them with hot milk, tea or coffee!!!!!
